Stevia Rebaudiana is a herb with naturally sweet tasting leaves. The fine white powder extracted from these leaves is intensely sweet and can be used as a calorie-free, carbohydrate-free replacement for sugar in nearly every application.
Our Stevia contains 95% Steviol Glycosides and is very concentrated. You could sweeten 700 cups of tea from just one 50g packet. The trick to using concentrated Stevia is to either use a very small amount, or to mix with other ingredients. In baking, the correct tecnique is to mix the required amount (approx 1 level teaspoon to replace 1.5 cups of sugar) with the dry ingredients.
Stevia works especially well with citrus or tangy flavours (e.g. a lemon cake).
Idea! Mix 1 gram of stevia with 100 grams of Erythritol to make a user friendly sugar substitute that can be used in the same quantities as table sugar.
